
Burnt Sugar Cake

Burn ½ cup sugar to a dark caramel (black).

Stir in ½ cup boiling water; cook to syrup and let cool.

Cream together 1 1/2 cups of white sugar and 1/2 cup of butter.

And add 3 egg yolks, one at a time, beating after each egg yolk is added. (Save the egg whites) Sift together: 2 1/2 cups of fluor, 2 tsp baking powder and pinch of salt.

Add flour mixture alternately with 1 cup sweet milk until all is mixed.

Add 4 Tbsp burnt sugar syrup.

Fold in beaten egg whites.

Bake at 350° in 2 or 3 layers.
This recipe dates back to 1920.
