Beau’s Famous Cheesecake

Preheat oven to 350°.

Grease and flour springform pan (heavier where bottom meets sides).

Optional: sprinkle sugar.

Wrap aluminum foil under bottom and up sides of pan.

Set aside.

Mix cream cheese and sugar.

Add eggs one at a time, beating well after each.

Add vanilla.

Fold in heavy cream.

Pour into prepared pan.

Place springform pan into larger pan with 1 inch of water.

Bake 1 hour.

Turn oven off and leave cake inside for 20 minutes.

Crack oven door and leave cake another 20 minutes.

Remove and cool to room temperature.

Refrigerate.

Use sewing thread to cut cheesecake before serving.

Optional topping: Sprinkle raw sugar on top and torch until hardened for a crunchy top.
