    Peel and dice potatoes.

    Salt potatoes while boiling and cook covered in water until tender.

  3. 3

    Skim foam as needed while boiling.

  4. 4

    Add butter, evaporated milk, Velveeta cheese, and pepper to taste.

    Stir continuously, especially after adding milk and cheese, to prevent scorching.

  6. 6

    Serve with cornbread muffins, bacon bits, shredded cheese, and diced green onions.
