Lori’s Collard Pea Medley

    Start bacon in a large skillet or pot and cook until fat begins to render.

    Add Tasso, sausage, onion, and garlic if desired; cook until browned.

    Drain excess grease if needed.

  4. 4

    Add collard greens and chicken broth.

  5. 5

    Do not make it too soupy.

  6. 6

    Stir in black-eyed peas and lightly mash some of them.

  7. 7

    Cook until greens are tender and flavors blend well.

  8. 8

    Add chopped green onion and a little extra onion at the end.

  9. 9

    Finish with a splash of soy sauce to taste.

    Serve on rice.
