Ham Cure Recipe

Ingredients

• For 1 ham (or shoulder)
• 1 pt. coarse salt (for large joint add salt)
• 4 Tbsp. brown sugar
• 3 Tbsp. black pepper (mix)

Directions

   Place several layers of paper on table.

   Put some mixture on table, then lay joint in it.

   Put rest of mixture over it and rub it well over.

   Wrap in paper, folding mixture up in it, then place in cloth sack.

   Let lay in a cool but not freezing place a few days, turning often.

   Then hang in a cool, dry place.

   Ready in a month or two.
