Beef Birria Enchiladas

    Season roast with salt and pepper and brown in skillet with avocado oil.

    Remove from heat.

    Roughly chop onion, garlic, and ginger.

    Prepare chipotle chiles by cutting and removing seeds.

    Place roast in oven-safe pot or crockpot.

  6. 6

    Add onion, garlic, and ginger to roast.

    Add remaining ingredients (except chipotle chiles).

    Add chipotle chiles on top.

    Cook 3 hours at 350° or 8 hours on low in crockpot.

    Remove cinnamon sticks, bay leaves, and chiles.

    Remove roast, shred meat, and discard excess fat.

    Blend liquid until it is smooth to create sauce.

    Add some sauce to shredded beef.

    Fill tortillas with beef, roll, and place in pan.

    Cover with sauce and top with cheese.

    Bake at 350° until cheese is melted and bubbly.

    Top with cilantro and serve.

    Adjust spice level to taste.

    You can also use beef for tacos or quesadillas.
