
LoeCo Cajun Roast

Pierce and insert about 4 split cloves of garlic in meat.

Salt and pepper generously.

Prestart 5 lbs. charcoal in Cajun Smoker Cooker.

Fill pan with water.
- 5
Half two onions and place them in water pan.
- 6
Place roast on grill and cook for 3 hours. (Make sure water pan does not get empty.)

Add a double handful of small dried broken pecan limbs to coals and cook for 1 more hour.

Good served hot or cold.
