Lasagna Roll Ups

    Preheat oven to 375°F.

    Cook noodles in salted water according to package directions.

    Drain and rinse with cold water to stop cooking and prevent sticking.

    In a pan, cook ground beef over medium-high heat until it is no longer pink.

    Add onion and cook until softened.

  6. 6

    Add garlic, salt, pepper, and oregano; cook another minute.

    Add marinara, simmer, then remove from heat.

    In a bowl, mix ricotta, egg, parmesan cheese, 1 1/2 cups mozzarella, and parsley.

    Lay noodles flat.

    Spread cheese mixture on each noodle, then add meat sauce.

    Roll up and place it in casserole dish.

    Spread remaining meat sauce over roll ups and top with remaining mozzarella.

    Cover with foil.

    Bake at 375°F for 40 minutes.

    Remove foil and broil 2–3 minutes until lightly golden.

    Garnish with parsley and serve.
