Mexican Chicken Casserole

Boil and debone chicken or use rotisserie chicken.

Shred or cut into small pieces.

Add all Ingredients except 1 cup of cheese into a large bowl and mix well.

Place crushed Doritos in the bottom of a 13x9x2 pan.

Pour mixture over Doritos.

Bake at 375°F for 45 minutes to 1 hour, covered with foil.

When bubbly and vegetables are tender, add 1 remaining cup cheese on top and return to oven uncovered for 5 minutes to melt.
