Iron Skillet Cornbread

Ingredients

• 2 cups self-rising corn meal
• 1/3 to 1/2 cup self-rising flour
• 2 whole eggs
• Buttermilk, for desired consistency
• Small amount of bacon grease for skillet

Directions

   Mix the cornmeal, flour, and eggs well.

   Add enough buttermilk to reach your desired consistency, then stir the batter really good.

   Heat a large skillet and a small skillet with a small amount of hot oil.

   Pour the batter into the hot skillet(s).

   Bake in a 400-degree oven until golden brown.
